EDIT: This discussion is primarily about iOS and iPadOS, but information about other platforms is welcome. I just added Japanese keyboard and it works pretty much out-of-the-box. For other phones this may not be as simple.
A close alternative for kanji is the Simplified Chinese Handwriting keyboard; it can recognize Japanese character forms in addition to Simplified and Traditional Chinese. Interestingly, it can even recognize Japanese-only characters such as 働 and 峠. If you want to write full sentences in Japanese including the kana, you can download a 3rd party keyboard like Mazec which is a paid app. For Android, Gboard has built in Japanese handwriting, you just have to dig into the options to enable it.

Think about what っ means in Japanese. It’s there to mark a geminate consonant. And you spell that in romaji with two of that consonant in a row. Now that you know how to type in hiragana and katakana, you can start converting some of it to nice, fancy kanji. By using the spacebar , just like you did with katakana words.

If that’s the case, hit enter also known at the return key and you can go on typing. Use the arrow keys to select the part of the sentence you want to change. Did you scroll through a ton of kanji and now can’t find the original kana you started with? Just hit the escape key once and it will revert back to the kana.
